Enzyme inhibitor | This naturally occurring aglucon (FW = 274.27 g/mol; CAS 60-82-2) of phlorizin (or phloridzin) is generated from the latter by the action of bglucosidases, the phlorizin hydrolase activity of lactase, and by dilute mineral acids. Phloretin is soluble in ethanol and acetone. It is almost insoluble in water; however, the solubility is increased upon addition of ethanol. It adsorbs to lipid surfaces and alters the dipole potential of lipid monolayers and bilayers. Adsorption to biological and artificial membranes results in a change of the membrane permeability for a variety of charged and neutral compounds.
